Crispy, Sweet & Savory Brussels Sprouts
OK, I’ll be honest. As a child, Brussels sprouts were literally my least favorite thing to put in my mouth. The way I remember them, they were boiled, and served with a sprinkle of salt. Not a fan.
Thank the Lord for second chances! Once my brothers were adults, they would occasionally bring brussels sprouts to family gatherings, and for years I looked on curiously, as they actually looked appealing—crispy, seasoned, and a little saucy. Eventually, I decided to be brave and give my “least favorite vegetable” another try.
The. Best. Veggie.
Seriously. It checked every box: A green leafy vegetable, crisped up perfectly, subtly sweet, delightfully savory, giving the perfect crunch. My life was changed forever. That may be a little dramatic, but my previous least-favorite has become a new family favorite. Ready to give it a try?

5 minutes of prep
25 minutes cook time
makes about 6 servings
cooks perfectly in toaster oven, if you don’t want to heat the big oven
Gather
2 pounds fresh Brussels sprouts
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon garlic powder
sprinkle of salt and pepper
1 tablespoon soy sauce
Prepare
First, preheat the oven or toaster oven to 400°F.
Meanwhile, trim any thick ends and ugly leaves off the Brussels sprouts.
Cut Brussels sprouts in half, long ways (from the tops of the leaves to the stem).
Place Brussels sprouts in a mixing bowl and add the olive oil, balsamic vinegar, garlic powder, salt and pepper.
Mix well so the flavors get in between the leaves.
Spread the mixture evenly across an oven safe pan, and place in the oven. Set the timer for 25 minutes.
After 25 minutes, check the tenderness of the brussels sprouts. If you want them a bit softer, add 2-5 minutes.
Finalize the perfect crisp by setting the oven to a high broil for 2-3 minutes. (Keep an eye on them at this point—broiling can turn them black quickly!)
Add the soy sauce and any additional salt and pepper, as desired, and stir well to combine. Serve immediately.
Enjoy!
